Vegetable oils are liquid at room temperature because their fatty acid chains are bent into a “cis” shape. Partial hydrogenation forces hydrogen atoms into that chain, straightening some of the bonds into a “trans” shape and turning the oil semi-solid. Fully hydrogenated oil contains almost no trans fat, but partially hydrogenated oil, the cheaper and more common version, does.

Hydrogenated oil turns up wherever a manufacturer needs a solid or semi-solid fat that survives Indian shelf conditions without refrigeration. Vanaspati itself is sold directly to households and used heavily in commercial and roadside frying. Bakery shortening built on partially hydrogenated oil gives biscuits and pastries their texture and long shelf life.

It also shows up less visibly inside packaged snacks, instant noodles’ tastemaker sachets, non-dairy creamers, and some margarines. Deep fried street food such as samosas and pakoras made with reused vanaspati or repeatedly heated oil adds a further, harder to quantify source that sits outside any packaged label entirely.

The clearest human evidence on trans fat comes from a controlled feeding trial, not an observational survey. Mensink and Katan fed 59 healthy adults three diets differing only in fat type, each for three weeks. Trans fat raised LDL cholesterol and also lowered HDL cholesterol, an effect the researchers described as at least as unfavourable as saturated fat, and worse on the HDL side specifically.

That dual effect, LDL up and HDL down together, is what makes trans fat stand out among dietary fats for cardiovascular risk. The World Health Organization and the Pan American Health Organization estimate industrial trans fat intake contributes to more than 500,000 premature deaths from coronary heart disease worldwide each year, with risk rising once intake exceeds about 1% of daily energy.

Does trans fat intake raise diabetes risk?

The strongest human data here comes from the Nurses’ Health Study, which followed 84,204 women aged 34 to 59 with no diabetes, cardiovascular disease or cancer at baseline for 14 years. Total fat, saturated fat and monounsaturated fat showed no association with type 2 diabetes risk. Trans fat did: each 2% increase in energy from trans fat raised risk by 39%.

The same study found polyunsaturated fat moved risk in the opposite direction, and its authors concluded that replacing hydrogenated, trans fat containing oils with non-hydrogenated polyunsaturated oils would likely cut diabetes risk meaningfully. Can trans fat affect memory and brain health?

The best available human evidence comes from the Women’s Health Study, which tracked dietary fat intake and cognitive performance in 6,183 women aged 65 and older over four years. Higher trans fat intake was associated with a worse cognitive trajectory, in the same direction as higher saturated fat, while monounsaturated fat intake was associated with better outcomes.

Two limits matter here. The study is observational, so it cannot prove trans fat caused the decline, and every participant was an older woman, so it says nothing directly about men or younger adults. Claims that trans fat causes Alzheimer’s disease specifically go further than this evidence supports, and this article does not repeat that claim.

Is there evidence trans fat affects pregnancy and fetal growth?

Human evidence on trans fat during pregnancy is limited and inconsistent, not settled. What are FSSAI’s limits on trans fat in packaged food?

FSSAI regulates industrial trans fat through the Food Safety and Standards (Prohibition and Restrictions on Sales) Second Amendment Regulations, gazetted on 3 February 2021.
